Chhùi-nōa (saliva) sī chhùi-nōa-sòaⁿ (salivary gland) hun-pì-bu̍t kap khí-gîn sìm-chhut-sio̍h (gingival fluid exudate) ê hūn-ha̍p-bu̍t, bô-sek thàu-bêng sió-kóa-á sng-sng, koh ū-sî ko-ko. Iú-ki ê sêng-hun pau-koah amylase, mucin, kap khah chió-liōng ê nn̄g-pe̍h-chit, urea, glucose, lactic acid, phosphatase, kap carbonic anhydrase.
