Chià-thn̂g (Eng-gí: sucrose) sī 1-chióng siang-thn̂g (disaccaride), hē-thóng-miâ hō-chò α-D-glucopyranosyl-β-D-fructofuranoside, iû 1-ê phô-tô-thn̂g hun-chí kap 1ê fructose hun-chí liân-kiat cho·-sêng.
Chià-thn̂g sī tēng, pe̍h-sek, ta ê cheng-thé, 1-lia̍p-1-lia̍p he̍k hún-hún-soa-soa, tam--khí-lâi sī tiⁿ ê, phīⁿ--khí-lâi bô-bī, ah chiâⁿ gâu iûⁿ tī chúi--līn, sió-khóa-á iûⁿ tī chiú-cheng, soah bē iûⁿ tī benzene, petroleum, kap kî-thaⁿ ê iú-ki-iûⁿ-chē (organic solvent).
Chià-thn̂g chú-iàu sī ùi kam-chià kap sugar beet (Beta vulgaris L.) lâi chè-chō, sī ji̍t-siông seng-oa̍h siāng-chia̍p sú-iōng ê thn̂g. I kah chiù-khí ū ti̍t-chiap ê koan-hē, kah bó·-1-kóa kî-thaⁿ jîn-lūi ê pēⁿ-thiàⁿ mā-ū koan-hē.
